Beef And Bean Burritos Smothered With Red Chile Chimayo (Print Version)

Ingredients:

01 - 1 pound lean ground beef.
02 - 1 packet taco seasoning.
03 - 1 (16-ounce) can refried beans.
04 - 6 large (12-inch) flour tortillas.
05 - 1 1/2 cups cooked Mexican rice.
06 - 1 1/2 cups shredded Mexican cheese.
07 - Vegetable oil.
08 - Cilantro, sour cream, salsa, avocado for serving.

Instructions:

01 - In a large nonstick skillet, cook the ground beef over medium heat, breaking it apart as it cooks.
02 - Add the taco seasoning and stir until the beef is fully coated.
03 - Stir in the refried beans until the mixture is well combined and heated through.
04 - Warm the tortillas by placing them on a microwave-safe dish, covering with a damp paper towel, and microwaving for 30 seconds.
05 - Place one-sixth of the beef mixture in the center of each tortilla, followed by a spoonful of Mexican rice and a sprinkle of shredded cheese.
06 - Fold the tortillas burrito-style, tucking in the ends and rolling tightly.
07 - In a large pan, heat about a tablespoon of vegetable oil over medium-high heat. Fry two burritos at a time, turning to brown all sides until crispy and golden.
08 - Serve the burritos with Red Chile Chimayo sauce, garnished with cilantro, sour cream, salsa, and avocado.
