Banana Fritters (Print Version)

Ingredients:

01 - 2 eggs (at room temperature).
02 - 2/3 cup milk (at room temperature).
03 - 1 tablespoon unsalted butter (melted).
04 - 1 teaspoon vanilla extract.
05 - 1 1/2 cups all-purpose flour.
06 - 2 tablespoons brown sugar.
07 - 2 teaspoons baking powder.
08 - 1/2 teaspoon ground cinnamon.
09 - 1/4 teaspoon salt.
10 - 3 ripe bananas (chopped).
11 - Vegetable oil (for frying).
12 - 2 cups powdered sugar.
13 - 1/3 cup milk.
14 - 1/2 teaspoon vanilla extract.
15 - 1/8 teaspoon ground cinnamon.

Instructions:

01 - In a medium mixing bowl, whisk together eggs, milk, melted butter, and vanilla extract until well combined. Set aside.
02 - In a large mixing bowl, combine flour, brown sugar, baking powder, cinnamon, and salt. Pour the wet ingredients into the dry ingredients and mix until just combined.
03 - Fold chopped bananas into the batter until evenly distributed.
04 - Place a large pot over medium-high heat. Add enough vegetable oil to reach 2 inches depth in the pot. Heat the oil to 350°F (175°C).
05 - Using a small cookie scoop or tablespoon, carefully drop 3-4 scoops of fritter dough into the hot oil. Fry for 4-5 minutes, flipping occasionally, until the fritters are golden brown on all sides.
06 - Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined tray to drain excess oil. Repeat until all the batter is used.
07 - Once the fritters have cooled, prepare the glaze by whisking together powdered sugar, milk, vanilla extract, and ground cinnamon in a medium mixing bowl until smooth.
08 - Dip each cooled fritter into the glaze, ensuring it’s fully coated. Place glazed fritters on a wire rack set over a baking sheet to let any excess glaze drip off.
