Bailey's Irish Cream Cookies (Print Version)

Ingredients:

01 - 3/4 cup brown sugar, packed.
02 - 1/4 cup sugar.
03 - 1 egg.
04 - 1 1/2 cups flour.
05 - 1/2 cup unsalted butter, at room temperature.
06 - 1 tablespoon Bailey's Irish Cream.
07 - 1 cup chocolate chips.
08 - 3/4 teaspoon baking powder.
09 - 1/2 teaspoon baking soda.
10 - 1/4 teaspoon salt.
11 - 1/2 cup unsalted butter, at room temperature (for buttercream).
12 - 2 teaspoons Bailey's Irish Cream (for buttercream).
13 - 1 cup powdered sugar, sifted (for buttercream).

Instructions:

01 - Heat your oven to 350° F and prepare baking sheets with parchment paper or silpats.
02 - In a large bowl, mix together the dry ingredients: flour, baking powder, baking soda, and salt. Set this aside.
03 - Using a stand mixer, cream together the butter, sugar, and brown sugar until the mixture is light and fluffy, then scrape the sides of the bowl.
04 - Incorporate the egg and Bailey's Irish Cream, mixing until fully combined. Gradually add the dry ingredients while the mixer runs on low, mixing just until combined. Gently fold in the chocolate chips.
05 - Using a large cookie scoop, place the dough onto the prepared baking sheets, ensuring they are at least 2 inches apart. Bake for 12 minutes, rotating the sheets halfway through. Let the cookies cool completely on a wire rack.
06 - For the buttercream, whip together the room temperature butter and sifted powdered sugar until the mixture is smooth and well blended.
07 - Add the Bailey's Irish Cream and mix until combined. Adjust the consistency by adding more powdered sugar for thickness or more cream if it is too stiff.
08 - To assemble, flip half of the cookies upside down, pipe the buttercream onto each of these cookies, and then place the remaining cookies on top to create sandwiches.
