Apple Turnovers (Print Version)

Ingredients:

01 - 1 17.3-ounce package frozen puff pastry, thawed.
02 - 3 cups Granny Smith apples, peeled and chopped into 1/2-inch pieces.
03 - 2 tablespoons unsalted butter.
04 - 1/2 cup brown sugar, lightly packed.
05 - 2 teaspoons lemon zest.
06 - 1/2 teaspoon ground cinnamon.
07 - 1/4 teaspoon nutmeg.
08 - 1/4 teaspoon salt.
09 - 1 egg, beaten.
10 - 1 tablespoon water.
11 - Icing: 1/2 cup powdered sugar.
12 - 1 1/2 tablespoons heavy cream.
13 - 1/8 teaspoon almond extract.

Instructions:

01 - Preheat the oven to 400°F. Line two baking sheets with parchment paper and set aside.
02 - Allow the puff pastry to thaw while you prepare the apple filling.
03 - In a pot over medium heat, melt the butter until bubbling. Add the chopped apples and cook for five minutes, or until the apples begin to soften.
04 - Add the brown sugar, lemon zest, cinnamon, nutmeg, and salt. Cook for an additional two minutes, stirring to coat the apples in the spices.
05 - Transfer the cooked apples to a bowl and set aside to cool while you prepare the puff pastry.
06 - On a parchment-lined counter, unfold the sheets of dough and gently roll out the creases to create a flat square measuring 12” x 12”.
07 - Using a pizza cutter or sharp knife, divide the dough into four equal-sized squares.
08 - Place the squares on the prepared baking sheet and spoon 2 tablespoons of the cooled apple mixture into the center of each square.
09 - Brush the edges of the squares with the egg wash and fold one corner of the square over to the opposite side, sealing the edges by crimping with a fork.
10 - Cut three shallow slits through the top of the dough to allow steam to escape during baking.
11 - Brush the top and sides of the turnovers with the remaining egg wash. Repeat with the second sheet of dough.
12 - Chill the turnovers in the freezer for 15 minutes before baking.
13 - Bake the turnovers for 12 to 15 minutes, or until the dough has puffed up and is golden brown.
14 - Let the turnovers cool on a wire rack while you prepare the icing.
15 - In a small bowl, mix powdered sugar, almond extract, and heavy cream until smooth and thick, but pourable.
16 - Drizzle the icing over the cooled turnovers and let it set for 10 minutes before serving.
